- 1 pt. vinegar
- 1 qt. sugar
- 2 tsp. salt
- 1 tsp. white mustard seed (per qt. jar)
- 1/2 tsp. white mustard seed (per qt. jar)
Directions

1Wash beets and cook them until tender.

2Be sure not to overcook them.

3Take skins off, leaving whole if small.

4If large, cut in halves or quarters.

5Put vinegar, sugar and salt in 1 gallon or larger container.

6Add beets; cook until they simmer. Place white mustard seed in jars and can the hot beets.
