  • beets
  • 1 pt. vinegar
  • 1 qt. sugar
  • 2 tsp. salt
  • 1 tsp. white mustard seed (per qt. jar)
  • 1/2 tsp. white mustard seed (per qt. jar)

Directions

    Wash beets and cook them until tender.

    Be sure not to overcook them.

    Take skins off, leaving whole if small.

    If large, cut in halves or quarters.

    Put vinegar, sugar and salt in 1 gallon or larger container.

    Add beets; cook until they simmer. Place white mustard seed in jars and can the hot beets.
