- Beets (desired amount)
- 2 c. sugar (per qt.)
- 2 c. apple cider vinegar (per qt.)
- 1 Tbsp. mixed pickling spice
- salt
Directions

1Cook beets until tender (2 1/2 - 3 hours, check with fork). Slip skins under cold water.

2Put beets into quart jars.

31 tsp. canning salt per qt.

4Make vinegar brine mix (mix sugar and vinegar).

5Put pickling spice and vinegar brine mix into boiling pot.

6Bring to a rolling boil.

7Pour over beets.

8To help lids seal, put lids into a pan of water and boil.

9Beets are now ready to seal.
