- 2 c. water
- 2 1/2 c. sugar
- 1 c. white vinegar
- whole cloves
- stick cinnamon
- dash of salt
Directions

1Heat this mixture very hot.

2Wash fresh, cleaned beets with peel on and cut tops off, leaving about 1 1/2-inch tops on.

3Cook with water until tender, but not too done.

4Cool and peel beets, placing them into a clean bowl.

5Place them into liquid and heat. Add 3 or 4 whole cloves into hot, clean jars and 1 stick cinnamon, also.

6Seal with new jar lids.

7Makes approximately 2 quarts and 1 pint.
