  • 4 each beets cooked, diced or grated
  • 1 teaspoon cardamom pods ground, plus more for garnishing
  • 3 tablespoons mints freshly chopped
  • 450 millilitres greek yogurt
  • 1 teaspoon honey or sugar
  • 1/2 each lemon juice
  • 1 x salt to taste

Directions

    Mix beets, cardamon and 2 tablespoons of mint.

    Whisk yogurt, honey salt and a squeeze of lemon juice.

    Layer beet and yogurt in a serving dish.

    Garnish with remaining mint and a sprinkle of cardamon.
