- 4 medium size beets
- 1 c. vinegar
- 1/2 c. sugar
- 2 tsp. prepared horseradish
- 1/4 c. chopped onion
- 1/2 tsp. salt
Directions

1Cook beets 35 to 40 minutes.

2Remove skins.

3Chop coarsely. In saucepan, heat vinegar, sugar and salt; stir until dissolved. Add other ingredients; boil 10 minutes, covered.

4Best if kept in refrigerator until used.

5Makes 1 1/2 cups relish.
