  • 3 whole Medium Beets, Peeled And Chopped Into Small Cubes
  • 1 whole Jalapeno Pepper, Seeded And Finely Chopped
  • 1/2 whole Red Onion, Chopped
  • 1/2 cups Fresh Cilantro, Chopped
  • 2- 1/2 Tablespoons Lime Juice
  • 2 teaspoons Honey
  • 1/2 teaspoons Salt

    Bring a large pot of water to a boil.

    Submerge beets to blanch for 4-5 minutes.

    Remove and strain into a large colander and rinse immediately with cold water.

    Allow to drain for 5-10 minutes.

    Place beets into a large bowl and add jalapeno, red onion, and cilantro.

    In a small bowl, whisk together lime juice, honey and salt.

    Add liquid mixture to beet mixture and fold to combine.

    Refrigerate for 30 minutes prior to serving.
