Ingredients
- 3 whole Medium Beets, Peeled And Chopped Into Small Cubes
- 1 whole Jalapeno Pepper, Seeded And Finely Chopped
- 1/2 whole Red Onion, Chopped
- 1/2 cups Fresh Cilantro, Chopped
- 2- 1/2 Tablespoons Lime Juice
- 2 teaspoons Honey
- 1/2 teaspoons Salt
Directions

1Bring a large pot of water to a boil.

2Submerge beets to blanch for 4-5 minutes.

3Remove and strain into a large colander and rinse immediately with cold water.

4Allow to drain for 5-10 minutes.

5Place beets into a large bowl and add jalapeno, red onion, and cilantro.

6In a small bowl, whisk together lime juice, honey and salt.

7Add liquid mixture to beet mixture and fold to combine.

8Refrigerate for 30 minutes prior to serving.
