Beetleaf Vegan Pasta

Ingredients
- 8 leaves beetroots (1 bunch or bag)
- 4 garlic cloves
- 3 tablespoons olive oil
- salt
- pepper
- 250 g whole wheat pasta
- 14 cup pasta sauce
Directions

1Wash and pat dry beetroot leaves.

2Coarsely slice into strips.

3Place in frying pan with olive oil over a med low flame and cover.

4While beetroot leaves are wilting slice up the garlic.

5When leaves begin to wilt add the garlic to the pan and toss/stir.

6Add a bit of salt to taste.

7Cover again stirring occasionally until the garlic becomes translucent.

8Remove from heat.
-
9Make pasta according to directions on bag.

10Add cooked leaf/garlic mixture to pasta.

11Add some canned or homemade tomato sauce and freshly ground black pepper.

12Eat and enjoy.
