  • 1 1/2 cups vegetable oil
  • 1 1/2 cups beets, mashed, can use baby food
  • 1 1/2 cups flour
  • 3/4 teaspoon salt
  • 1/4 tablespoon baking soda
  • 1/2 cup cocoa
  • 1 teaspoon vanilla

    Cream eggs with sugar.

    Mix the oil and beets into the egg mixture.

    Sift the flour, salt, baking soda, and cocoa into the beet mixture and blend.

    Stir in the vanilla.

    Grease a Bundt pan and pour the mixture into the pan.

    Bake at 350 degrees F. for 30 minutes or until a toothpick comes out clean.
