BEETROOT SOUP (Barszcz)

- 2 liters beef stock or 2 liters vegetable stock
- 1 onion, peeled and chopped
- 1 bouquet garni
- 1 can mushroom (or fresh)
- 3 medium uncooked beetroots, peeled and sliced thickly
- 300 ml kwas
- 1 teaspoon sugar
Directions

1Heat beef stock in a large pan.

2Add the onion, bouquet garni, mushrooms and beetroot.

3Boil for an hour.

4Strain the soup and stir in the kwas into the clear soup.

5Add sugar to taste and reheat, if necessary without boiling.
