- 4 large potatoes baked and peeled
- 4 Tbsp. butter
- salt and pepper to taste
- 1 Tbsp. chives
- fresh chopped parsley
Directions

1Cut based potatoes into one inch cubes.

2Heat butter in large pan until just simmering. Add the potatoes, add salt and pepper. Brown potatoes on all sides, add chives and serve warm.

3Add parsley for garnish.
