Bell Pepper Casserole

Ingredients
- 1 1/2 lb. ground beef
- 2 c. Minute rice
- 2 or 3 bell peppers
- 1 1/2 c. grated cheese
- 1 can tomato sauce
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. oregano
- 1 onion, chopped
Directions

1Brown ground beef and seasonings.

2Pour off grease.

3Boil bell peppers in saucepan 2 or 3 minutes.

4Cool and then slice.
-
5In medium casserole dish, butter bottom.

6Arrange bell pepper slices on bottom.

7Add on top of sliced bell peppers the Minute rice, onion and ground beef.

8Then add tomato sauce.
-
9Stir a little (but not the peppers).
-
10Top with grated cheese and bake until bubbly and hot at 350°.

11Serve with green salad and slim, sliced (not buttered) French bread.
