- 1 lb. bacon
- 2 cans Ro-Tel tomatoes
- 1 large onion, chopped
- 1 green pepper, chopped
- 1/4 c. celery, chopped (optional)
- 1 c. grits
Directions

1Cut bacon into small pieces and fry in a heavy saucepan. Remove bacon from pan. Add onion, green pepper and celery to bacon drippings. Saute until onion is clear.

2Add the canned tomatoes, grits, 1 can of water and bacon to onion mixture.

3Cook until grits are done, 15 to 20 minutes.

4May have to add a little more water.
