Berry-Filled Lemon Cake

- 1-1/4 cups water
- 3/4 cup egg substitute
- 1/4 cup plain nonfat yogurt
- 1 tablespoon grated lemon zest
- 1 package yellow cake mix (regular size)
- 1/2 cup confectioners' sugar
- 3 teaspoons lemon juice
- 2 cups sliced strawberries
Directions

1In a large bowl, combine the cake mix, water, egg substitute, yogurt and lemon zest; beat on low speed for 30 seconds. Beat on medium for 2 minutes.

2Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.

3Combine sugar and lemon juice; drizzle over cake. Fill center of cake with strawberries.
