- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1 Tbsp. fresh lemon rind
- 1/2 tsp. salt
- 1/3 c. honey
- 1/4 c. butter
- 1/3 c. milk (whole or skim)
- 1 large egg or 2 egg whites
- 2 Tbsp. fresh lemon juice
- fruit: 1 1/2 c. fresh blueberries or blackberries, cherries or raspberries
Directions

1Sift dry ingredients in mixing bowl.

2Make well in center. Beat together with remaining ingredients (except berries) and pour into well.

3Blend the ingredients, stirring gently, then add berries.

4Fill muffin tins 2/3 full.

5Bake 25 to 30 minutes.

6Cool and eat.
