- 1 quart fresh strawberries, rinsed and hulled, or 1 quart fresh raspberries, rinsed
- 3 cups sugar
- 1 tablespoon strawberry (or raspberry) extract
- 2 cups water
- Sliced strawberries or whole raspberries, for garnish
Directions

1Place the berries in a shallow bowl and cover with the sugar.

2Set aside to form a syrup, about 1 hour.

3Once the syrup has formed, place a sieve over a medium-size bowl and pour the berries and syrup through, pressing with a wooden spoon to extract all the juice and syrup.

4Add the extract and the water and mix.

5Pour into a freezer container and freeze until a light frosting appears, about 2 hours.

6Spoon into small glasses, garnished with strawberry slices or whole raspberries.
