- 1 ounce. of butter
- 3 ounce. minced fresh mushrooms
- 1 minced shallot
- 1/4 minced onion
- 1 slice of ham, minced
- 2 tbsp. dry white wine
- 1 healthy pinch thyme
Directions

1In a skillet, heat ham with butter over a moderate fire.

2Saute/fry for a few min, then add in onion, shallots, and saute/fry one more minute.

3Add in mushrooms and thyme and let cook till most of the moisture is gone.

4Then add in white wine and mix together.

5Season to taste.

6Let cold before coating salmon.

7Serve Salmon Wellington with a light, white wine sauce, a Sauce Hollandaise or possibly Sauce Mousseline.
