Ingredients

  • 1 ounce. of butter
  • 3 ounce. minced fresh mushrooms
  • 1 minced shallot
  • 1/4 minced onion
  • 1 slice of ham, minced
  • 2 tbsp. dry white wine
  • 1 healthy pinch thyme

Directions

    In a skillet, heat ham with butter over a moderate fire.

    Saute/fry for a few min, then add in onion, shallots, and saute/fry one more minute.

    Add in mushrooms and thyme and let cook till most of the moisture is gone.

    Then add in white wine and mix together.

    Season to taste.

    Let cold before coating salmon.

    Serve Salmon Wellington with a light, white wine sauce, a Sauce Hollandaise or possibly Sauce Mousseline.
