- 1 lb. dry navy beans (2 1/2 c.)
- 1 c. potatoes, diced
- 1 c. carrots, diced
- 1 c. onions, finely chopped
- 2 c. tomatoes, finely chopped or 1 (16 oz.) can
- 1/2 c. salad oil
- 2 cloves garlic, finely chopped
- salt and pepper to taste
Directions

1Soak beans overnight.

2Next day, using soaking water and enough extra water to cover, if necessary, cook beans over medium heat for 1 hour.

3Add all other ingredients and cook 1 more hour or until everything is tender.

4Makes 4 to 6 servings.
