- 3 lbs. boneless chuck roast
- 1 c. barbecue sauce
- 1/2 c. apricot preserves
- 1/2 c. chopped red bell pepper
- 1 small onion
- 1 Tbsp. Dijon mustard
- 2 tsp. brown sugar
Directions

1Cut roast in quarters.

2Place in greased 5 qt. crock pot. Combine all ingredients and mix thoroughly.

3Pour over roast. Cover and cook on low for 6 to 8 hours.

4Slice apart meat; cook for 30 minutes longer.

5Serve on rolls.
