- 4 eggs
- 1 c. oil
- 2 c. sugar
- 1 lb. carrots, cut in 1-inch pieces
- 2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 c. raisins
- 3/4 c. nuts (optional)
Directions

1Mix dry ingredients except sugar together; set aside.

2In processor, beat eggs with machine on slow.

3Add in order the oil, sugar, carrots, raisins, nuts, then dry ingredients.

4Bake in greased and floured 9 x 12-inch or Bundt pan at 325° until done, 55 minutes in Bundt pan, less in 9 x 12-inch pan.

5Frost when cool.
