  • 4 eggs
  • 1 c. oil
  • 2 c. sugar
  • 1 lb. carrots, cut in 1-inch pieces
  • 2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 c. raisins
  • 3/4 c. nuts (optional)

Directions

    Mix dry ingredients except sugar together; set aside.

    In processor, beat eggs with machine on slow.

    Add in order the oil, sugar, carrots, raisins, nuts, then dry ingredients.

    Bake in greased and floured 9 x 12-inch or Bundt pan at 325° until done, 55 minutes in Bundt pan, less in 9 x 12-inch pan.

    Frost when cool.
