- 1 1/2 sticks butter
- 3 c. flour
- 2 c. yellow corn meal
- 1 c. sugar
- 4 Tbsp. baking powder
- 1 tsp. salt
- 2 large eggs
- 2/3 c. milk
Directions

1Melt butter and set aside.

2In large bowl, whisk together flour, corn meal, sugar, baking powder and salt.

3Combine eggs and milk and melted butter.

4Pour into flour mixture.

5Blend with wooden spoon.

6Batter should be moist but not runny.

7With spatula, spread into greased 9 x 13-inch casserole.

8Bake in center rack of oven at 350° until toothpick tested in center comes out clean. Allow to cool 20 minutes.
