  • 30 ounces black beans 2 cans, rinsed and drained
  • 30 ounces pinto beans 2 cans, rinsed and drained
  • 30 ounces white corn 2 cans, rinsed and drained
  • 4 ounces green chili peppers, canned 1 can, undrained
  • 1 each jalapeno pepper seeded and finely chopped if needed
  • 1 each sweet red bell peppers cored, seeded and finely chopped
  • 1 each green bell peppers cored, seeded and finely chopped
  • 1 small red onion finely chopped
  • 1 bunch cilantro finely chopped
  • 1/2 cup rice vinegar
  • 13 cup olive oil, extra-virgin
  • 1/4 cup sugar or to taste
  • 1 teaspoon garlic powder or to taste

    Add the black beans, pinto beans, white corn, green chiles, jalapeno pepper, red and green bell peppers, red onion, and cilantro in a large bowl, and toss until evenly coat and well mix.

    To make the dressing:

    Add the rice vinegar, olive oil, sugar, and garlic powder together in a pan, and stir well.

    Bring to a boil, then remove from heat, and let cool.

    Drizzle dressing over bean mixture, and toss evenly until mix well.
