Ingredients

  • 2 cucumbers, cut in half, seeded and sliced thin
  • 3/4 c. rice wine vinegar
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • 1/4 c. water
  • 1 small red onion, thinly sliced
  • 1 small red pepper, julienned
  • 1 shallot, finely chopped
  • 1/2 tsp. red pepper flakes

Directions

    Dissolve sugar in water and add rest of ingredients.

    Cover with plastic wrap in glass bowl and refrigerate for 1 to 3 hours. Drain liquid and serve.
