- 1 c. flour
- 1/2 c. margarine or butter, softened
- 1/4 c. powdered sugar
- 1 c. granulated sugar
- 2 tsp. grated lemon peel (optional)
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 2 eggs
Directions

1Heat oven to 350°.

2Mix flour, margarine and powdered sugar in small bowl.

3Press evenly in bottom and about 3/8-inch up sides of an ungreased 8 x 8 x 2-inch square pan.

4(If dough is sticky, flour fingers.)

5Bake 20 minutes.

6Beat remaining ingredients in a medium bowl on medium speed until light and fluffy.

7Pour over hot crust and bake until no indentation remains when touched lightly in center, about 25 minutes.

8Let stand until cool; cut into 1 1/2-inch squares.

9Makes 25 squares.
