- 2 lb. potatoes, cooked
- 1 1/2 c. potato water
- 1 pkg. dry yeast
- 2 eggs, beaten
- 2/3 c. sugar
- 2/3 c. cooking oil
- 1 1/2 tsp. salt
- 7 to 7 1/2 c. flour
- 1 egg yolk, beaten with 1 Tbsp. water
Directions

1Boil potatoes.

2Save water. Mash potatoes.

3Dissolve yeast in potato water which should be between 115° and 120°.

4Add sugar and salt. Let stand about 5 minutes.

5Add lukewarm potatoes and mix well.

6Add eggs and oil.

7Mix well.

8Add flour until dough is easy to handle.

9Let stand for 10 minutes.

10Knead until smooth.

11Cover and refrigerate 24 hours.

12It will rise in refrigerator.

13Remove and let stand at room temperature for 1 hour.
