Big Bold Burger Rub

Ingredients

  • 1 envelope (about 1 Tablespoon) Starbucks Via Italian Roast Extra Bold Instant Coffee
  • 3 Tablespoons Packed Light Brown Sugar
  • 1 teaspoon Dutch Process Cocoa Powder
  • 1-1/2 teaspoon Coarse Sea Salt
  • 1/4 teaspoons Freshly Ground Black Pepper
  • 1/2 teaspoons Smoked Paprika
  • 1 teaspoon Chili Powder
  • 1/2 teaspoons Ground Cumin
  • 1/8 teaspoons Allspice
  • 1/4 teaspoons Onion Powder
  • 1/8 teaspoons Garlic Powder
  • 1 pinch Cayenne Pepper

Directions

  1. 1
Combine all ingredients well. If you are not using it right away, place rub in an airtight container and store in your pantry for one month, or for up to 6 months in the freezer.
  2. 2
To use, sprinkle a generous amount of rub onto one or both sides of burgers, and gently rub it on the meat with your hands to make sure it adheres. Drizzle a small amount of canola oil over burgers and gently spread it over them. This helps seal in the juices and will give your burger a nice crust. Let burgers sit at room temperature for 15 minutes before grilling, or cover and refrigerate for several hours.
  3. 3
Take a paper towel, moisten it with a little canola oil, and rub it on the grates of your grill. Preheat grill to medium high, then add burgers. Resist the temptation to flip the burgers often-wait until they are done on one side (they'll release easily at that point), then flip. And please, for heaven's sake, don't squish your burgers with that spatula-it squeezes all of those yummy juices out and you'll end up with dry burgers!
  4. 4
Another tip for flavorful, juicy burgers: I like to add a small amount of Worcestershire sauce and mix it in with the meat. Delish!
