- 3 large cucumbers, cut into 1/16-inch thick pieces (unpeeled)
- 1 medium onion, chopped fine
- 1 medium green pepper, chopped fine (stems and seeds removed)
- 1 Tbsp. salt
- 2 tsp. celery seed
- 3/4 c. sugar
- 1/2 c. white vinegar
Directions

1Combine vegetables in a jar about 1 1/2-quart size.

2Sprinkle with salt and celery seed.

3Stir gently and let stand for about 1 hour.

4Combine sugar and vinegar.

5Stir until sugar dissolves. Pour over vegetables and stir to blend.

6Cover and refrigerate. Pickles will be ready to eat in one day.

7Keep covered in refrigerator.
