  • 1 pound okra
  • 1 yellow onion medium, or 1/2 cup of vagar
  • 1 jalapeno
  • 4 cloves garlic
  • 10 stems cilantro
  • 1/4 cup oil
  • 1 1/2 teaspoons cumin seed
  • 1/2 teaspoon tumeric powder
  • 1/4 teaspoon red chili powder or cayyenne pepper powder
  • 4 roma tomato or 1/3 cup of crushed tomato
  • 3/4 teaspoon salt

Directions

    Blend 1 Jalepeno, 4 cloves garlic, and 5-10 stems of cilantro.

    Saute onion until it is light brown (or use vagar).

    Add 1 1/2 tsp of cumin seed, 1/2 tsp of tumeric powder, 1/4 tsp of red chili (or cayanne pepper). Also add the green sauce that was blended.

    Add 4 roma tomatoes (or 1/3 cup of crushed tomato).

    Add 3/4 tsp of salt.

    Mix everything until see oil. Then add okra and mix.

    lower heat and cover the pot to let okra cook for 1/2 hour.

    once okra is soft, add juice from 1 lime.

    bindi should be dry and not sticky or watery.
