Ingredients

  • 6 to 8 large ripe tomatoes
  • 1 sweet red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 1/2 purple onion
  • 1 cucumber
  • 1 Tbsp. cilantro, chopped fresh
  • 1 Tbsp. parsley, chopped fresh
  • 1/2 c. red wine vinegar
  • 1/4 c. olive oil
  • 1 1/2 c. V-8 (plain or spicy)
  • salt and pepper to taste

Directions

    I use a food processor.

    Coarsely chop tomatoes*.

    Core, seed and coarsely chop peppers.

    Peel and coarsely chop onion.

    Peel, seed and coarsely chop cucumber.

    Combine in bowl with cilantro, parsley, vinegar, olive oil, V-8 juice and salt and pepper to taste.

    Chill overnight to ripen flavors.

    Serves 8 to 10 in chilled soup bowls with toasted croutons.
