  • 3 Tablespoons Butter
  • 1 Small Yellow Onion, Minced
  • 1/2 bunches Green Onions, Minced
  • 1/4 cups Celery, Minced
  • 2 teaspoons Minced Garlic
  • 3 Eggs, Well Beaten
  • 1/2 cups Ketchup
  • 1/2 cups Half-and-half
  • 1 teaspoon Cumin
  • 1/2 teaspoons Nutmeg
  • 1/4 teaspoons Cayenne Pepper
  • Salt And Pepper, to taste
  • 2 pounds Lean Ground Beef Chuck
  • 12 ounces, weight Ground Sausage
  • 3/4 cups Panko Crumbs

    Melt butter in a heavy skillet.

    Add both onions, celery, and garlic.

    Cook, stirring often, until moisture from the vegetables has evaporated, about 10 minutes.

    Set aside to cool.

    Cover and refrigerate vegetables until chilled, at least 1 hour.

    In a mixing bowl, beat together the eggs, ketchup, half-and-half, cumin, nutmeg, cayenne pepper, salt and pepper.

    Add beef, sausage, and panko crumbs.

    Add chilled vegetables.

    Mix thoroughly with hands, kneading for 5 minutes.

    Preheat oven to 350 degrees F.

    Form mixture into a loaf, approximately 12 x 5 x 2 1/2 inches, on a baking sheet.

    Bake until cooked through (or registers 160 degrees F on a meat thermometer, about 1 hour).
