- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk heated
- 3 breakfast sausage
- salt
- white pepper to taste

Directions

1Heat butter in a medium saucepan. Add flour and cook over low heat, stirring constantly for 8-10 minutes. Do not allow mixture to brown. Gradually add hot milk to butter-flour mixture, stirring constantly with a whisk, until sauce is thickened and smooth. Simmer for 5 minutes. Strain and keep warm.

2Remove skin and cut sausages into small pieces. Brown in skillet until cooked. Drain off fat and add sausage to strained hot gravy. Reheat. Add salt and pepper to taste. Serve over split, hot biscuits. Yield: 3 cups.
