  • 2 cup black beans, soak over nite
  • 4 cup water or broth
  • 1 small bell pepper, chopped
  • 1 medium onion, chopped
  • 1 rib celery, chopped
  • 2 tomatoes, peeled and chopped
  • 1 medium carrot, chopped
  • 1 tbsp minced garlic
  • 2 small chilies, chopped
  • 1/2 cup beer, i use dark beer
  • 2 tbsp white wine vinegar
  • 1 tsp cumim
  • 1/2 tbsp cayenne pepper
  • 2 tbsp chili powder
  • 1 chopped scallions
  • 1 sour cream for garnish

    recipe was based on recipe from cookbook 'Inter Courses' by martha hopkins and randall lockridge

    rinse then drain soaked beans

    combine beans with water in large pot
  4. 4
    bring to boil over medium heat
  5. 5
    add the vegetables, seasonings, beer, vinegar to the beans
  6. 6
    simmer covered for 1.5- 2 hours until beans are tender

    garnish with sour cream and chives

    serve with rice, corn bread or tortilla chips

    maybe made nonveg by adding 1 lb of meat your choice

    may also be cooked in a slow cooker for 5 hours, just increase water to 5 cups.
