  • 1/2 c. chopped onion (optional)
  • 1 Tbsp. vegetable oil (optional)
  • 1 1/2 c. cooked black beans
  • 1 (14.5 oz.) can tomatoes (with juice)
  • 1 c. whole kernel corn (canned or frozen)
  • 1/2 c. green pepper, chopped
  • 1 tsp. sugar
  • 1 Tbsp. chili powder or to taste
  • 1 tsp. cumin or to taste

    Saute onion in the oil. Combine all ingredients.

    Cover pan and simmer 20 minutes.
