- 1 celery rib, finely chopped

- 1/4 tsp salt
- 1/4 tsp pepper
- 2 cups vegetable stock
- 1 cup frozen corn
- 1 cup quinoa
- 1/2 (15 oz) can black beans
- 1/3 cup plus 2 Tbsp minced fresh cilantro-divided
