  • 1 (15 oz.) can black beans
  • 1 tsp. chopped jalapeno pepper
  • 1/4 c. finely chopped onion
  • 1/4 c. sour cream
  • 1/2 tsp. salt
  • 3 or 4 Tbsp. picante sauce
  • 1 1/4 c. grated sharp Cheddar cheese
  • freshly ground pepper

    Drain beans.

    Mash beans and add remaining ingredients, reserving 1/4 cup of cheese.

    Pour into a 1-quart baking dish. Bake 20 to 30 minutes at 350°.

    After 10 minutes, pour on remaining cheese and bake until melted.

    Serve warm with tortilla chips.
