  • 1 9/16 cups black beans boiled
  • 1 red onion
  • 2 tomatoes
  • 1 red bell pepper
  • 1 cayenne pepper or less, according to taste
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 jalapeno pepper optional
  • 2 tablespoons cilantro leaves
  • 2 tablespoons olive oil

Directions

    Chop the vegetables small, keeping onion separated.

    Mix the boiled black beans, chopped bell pepper, garlic and tomatoes in a bowl. Add cumin, salt, cayenne pepper and jalapeno (if using).

    Saute the red onion on a skillet with olive oil for 2-3 minutes.

    Add the mixture of beans and vegetables to the skillet. Reduce heat to low and simmer for 10-15 minutes or until vegetables are suitably cooked.

    Sprinkle cilantro leaves on top.
