Black Bean Rice

  • 1 c. instant rice
  • 1 can stewed tomatoes, crushed
  • 1 can black beans, do not drain
  • 1 can mushrooms
  • 1 tsp. hot seasoning (Creole or peppers)
  • 1 small onion, chopped

Directions

    In large skillet spray nonfat cooking spray, then add black beans, crushed tomatoes, mushrooms and onions.

    Bring to boil. Let boil for 10 minutes, then add cup of uncooked rice and seasoning.

    Let simmer for another 5 to 10 minutes until rice is tender.

    May add Polish sausage or hamburger, if desired.
