  • 1 can black beans, rinsed and drained
  • juice of 2 limes
  • 1 Tbsp. oil
  • 1 Tbsp. chopped fresh cilantro
  • 1 tsp. pepper
  • salt to taste
  • as much as desired: diced red and green peppers, corn kernels, diced tomatoes and grated carrots
