  • 2 15oz. cans black beans rinsed
  • 1 17oz. can corn
  • 2 tomatoes, chopped
  • 1 orange pepper chopped
  • 1 avocado peeled & chopped
  • 1/2 purple onion, chopped
  • 1/8 cup cilantro chopped
  • 4 Tblsp. lime juice
  • 2 Tblsp. olive oil
  • 1 Tblsp. red wine vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin

    Place veggies in bowl. Whisk together 2nd group of ingredients and pour over veggies. Store in fridge, mixing occasionally for at least 3 hrs.
