  • 8 cups chopped romaine lettuce
  • 4 medium tomatoes, chopped
  • 2 cups black beans cooked or canned without added salt, drained if canned
  • 4 carrots, peeled and grated
  • 1 cup unsalted roasted soy nuts
  • 1/2 cup
  • 4 medium bananas
  • 32 fl oz (4 cups) drinking water

Directions

    Arrange 2 cups lettuce and 1/4 of the tomatoes on each of 4 plates; top each with 1/2 cup black beans and 1/4 of the carrots.

    Sprinkle 1/4 cup soy nuts on top of each salad.

    Drizzle each with 2 Tbsp.
