- 4 medium tomatoes, chopped
- 2 cups black beans cooked or canned without added salt, drained if canned
- 4 carrots, peeled and grated
- 1 cup unsalted roasted soy nuts
- 1/2 cup
- 4 medium bananas
- 32 fl oz (4 cups) drinking water
Directions

1Arrange 2 cups lettuce and 1/4 of the tomatoes on each of 4 plates; top each with 1/2 cup black beans and 1/4 of the carrots.

2Sprinkle 1/4 cup soy nuts on top of each salad.
