Black Bean Soup

Ingredients

  • 1 (16 oz.) pkg. black beans
  • 1 large ham bone with meat
  • 1 large onion, chopped
  • 1 large carrot, thinly sliced
  • 1 medium potato, diced
  • 1 cube chicken broth
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. Tabasco
  • salt and pepper
  • sour cream
  • hard-boiled egg, finely chopped
  • thin slice of lemon

Directions

    Soak beans overnight.

    Drain, rinse and remove any bad beans. Put beans and next 7 ingredients in a large pot.

    Cover with water.

    Add salt and pepper to taste.

    Bring to boil.

    Cover and simmer 3 to 4 hours until done.

    Serve in soup bowls with a large tablespoon of sour cream on top.

    Garnish with hard-boiled egg or slice of lemon.
