- 1 lb. black beans
- 2 Tbsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. oregano
- 1 bay leaf
- 2 Tbsp. vinegar
- 2 large onions, chopped
- 2 green peppers, chopped
- 1/2 c. oil
- 3/4 c. rice, cooked
- 3 to 4 c. water
Directions

1Rinse and soak beans 10 to 12 hours.

2Bring to a boil.

3Simmer until beans are tender.

4Add salt.

5Add garlic powder, oregano and bay leaf.

6Saute onion and pepper in 1/2 of oil.

7Add to beans and vinegar.

8Simmer until ready to serve.

9Add rice and remaining oil.
