Ingredients

  • 1 lb. black beans
  • 2 Tbsp. salt
  • 1 tsp. garlic powder
  • 1/2 tsp. oregano
  • 1 bay leaf
  • 2 Tbsp. vinegar
  • 2 large onions, chopped
  • 2 green peppers, chopped
  • 1/2 c. oil
  • 3/4 c. rice, cooked
  • 3 to 4 c. water

    Rinse and soak beans 10 to 12 hours.

    Bring to a boil.

    Simmer until beans are tender.

    Add salt.

    Add garlic powder, oregano and bay leaf.

    Saute onion and pepper in 1/2 of oil.

    Add to beans and vinegar.

    Simmer until ready to serve.

    Add rice and remaining oil.
