Black Bean Soup

- 3 c. dry black beans
- 1 whole onion
- 2 stalks celery
- 2 cloves garlic
- 1 large can tomato sauce or 16 oz. Very Veggie juice or tomato juice
- 1 Tbsp. olive oil
Directions

1Soak beans 8 hours or overnight.

2Cook beans until tender in a large pot of water.

3Saute in olive oil, chopped celery, garlic and onion.

4Add to cooked beans.

5Add tomato sauce or juice. Serve with cornbread.
