Black Bean Soup

  • 3 c. dry black beans
  • 1 whole onion
  • 2 stalks celery
  • 2 cloves garlic
  • 1 large can tomato sauce or 16 oz. Very Veggie juice or tomato juice
  • 1 Tbsp. olive oil

Directions

    Soak beans 8 hours or overnight.

    Cook beans until tender in a large pot of water.

    Saute in olive oil, chopped celery, garlic and onion.

    Add to cooked beans.

    Add tomato sauce or juice. Serve with cornbread.
