Black Bean Soup

Ingredients

  • 2 c. dry black beans
  • 5 - 14 oz cans beef broth
  • 1 clove garlic
  • 1/2 c. diced celery
  • 1/2 c. diced carrots
  • 2 medium onions, diced
  • 2 ham hocks (optional)

Directions

    Rinse beans. Put them in a bowl with salt and cover with water. Soak over night. In morning, drain and rinse well.

    Place broth, beans and garlic in soup kettle and boil.

    Cover and simmer for about 3 1/2 hours. Add remaining ingredients and simmer for 1 more hour. Season to taste.

    Remove ham from hocks before serving. Makes about 4 qts.
