- 1/2 c. coconut
- 1 Tbsp. margarine
- 1 c. uncooked rice
- 1 (15 oz.) can black beans, rinsed and drained
Directions

1In medium saucepan, combine broth, coconut and margarine. Bring to a boil.

3Reduce heat; cover and simmer 15 minutes.

4Stir in beans; cover and cook an additional 5 minutes or until liquid is absorbed.
