- 1/3 c. oil
- 1 large onion, chopped
- 1 chopped bell pepper
- 1 can drained tomatoes, chopped
- 1 Tbsp. cumin
- 1 tsp. minced jalapeno
- 2 Tbsp. vinegar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. garlic, minced
Directions

1Heat oil in a large skillet.

2Add onion, bell pepper and garlic and cook until clear.

3Add rest of ingredients (except beans) and cook about 5 minutes.

4Mix the beans with vegetable mixture.

5Spoon over hot, cooked rice.
