Ingredients

  • 8 oz. cream cheese (room temperature)
  • 1/2 c. sugar
  • 1 beaten egg
  • 1/8 tsp. salt
  • 3/4 c. semi-sweet chocolate chips
  • 2 c. flour
  • 1 c. sugar
  • 1/4 c. cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. water
  • 1/2 c. oil
  • 1 Tbsp. white vinegar
  • 1 tsp. vanilla

Directions

    Beat egg, 1/2 cup sugar and 1/8 teapooon salt with wire whisk. Add cream cheese and beat well.

    With wooden spoon, stir in chocolate chips and refrigerate at least 1/2 hour.

    Sift together dry ingredients in a large mixing bowl.

    Add liquids and beat well by hand.

    In paper lined muffin tins, put batter in each, filling 1/3 full.

    Place 1 heaping teaspoonful of the refrigerated cheese mixture on top.

    Bake at 350° for 25 minutes.
