Black-Eyed Bean Soup

- 1/2 lb. black-eyed beans (dried)
- 6 c. water
- 1 tsp. salt
- 1/4 to 1/2 lb. lite sausage
- 1 bay leaf
- 1/4 c. chopped onion
- 3 chicken bouillon cubes
- 1 pkg. spinach or any greens
Directions

1Use heavy 6-quart pot.

2Put in beans and water.

3Boil 2 minutes.

4Cover and remove from heat. Allow to stand 1 hour. Return to heat. Add all other ingredients except spinach.

5Simmer 1 1/2 hours.

6May steam spinach separately and add to soup.

7Could add greens last 10 minutes to cook.

8Yields 6 servings.
