Blackberry Jam Cake

- 1 c. butter, softened
- 2 c. sugar
- 4 eggs (at room temperature)
- 3 c. sifted cake flour
- 3 tsp. baking powder
- 1 tsp. cinnamon
- 1/8 tsp. salt
- 1 tsp. ground cloves
- 1 c. milk
- 1 tsp. lemon extract
- 1 tsp. lemon zest
- 1 c. seedless blackberry jam
Directions

1Heat oven to 350°.

2Lightly grease and flour three 9-inch layer pans.

3In large bowl, cream butter and sugar until light and fluffy.

4Add eggs one at a time, beating well after each addition. Sift flour, baking powder, cinnamon, salt and cloves together 3 times.

5Add flour mixture alternately with milk to cream mixture, beginning and ending with flour mixture.

6Add lemon extract and lemon zest; fold in blackberry jam.

7Mix well.

8Pour batter into prepared pans.

9Bake 25 minutes or until cake tests done.

10Ice with frosting of your choice.
