Blender Potato Soup

- 1/2 c. Wesson oil
- 3 c. chopped celery
- 1 1/2 c. chopped onion
- 1/2 tsp. minced garlic
- 1/4 c. chopped fresh parsley
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 3 (14 1/2 oz.) cans chicken broth
- 3 c. peeled, diced potatoes
- shredded Cheddar cheese
Directions

1In a large saucepan, in hot oil, saute celery, onion and garlic until tender. Stir in remaining ingredients except cheese. Bring to a boil, reduce heat and simmer, covered, 20 minutes or until potatoes are tender.

2Pour half the mixture into blender and puree until smooth. Repeat with remaining soup.

3Sprinkle with cheese before serving.

4Yields 8 cups.
