- 1 package yeast, active dry 2 1/4 teaspoons
- 1 1/2 cups flour, all-purpose
- 1 1/2 cups buckwheat flour
- 3 cups milk warm
- 2 tablespoons butter melted
- 1/2 teaspoon salt
- 2 large eggs with the yolks and whites separated
Directions

1Dissolve the yeast into the warm milk in a bowl.

2The milk must be at least 100 degrees to properly activate the yeast, but not over 110 or it will kill it.

3Cover the bowl and let it sit for 5 to 10 minutes.

4Whisk the egg yolks and add them and the butter to the milk.

5Sift the flours with the salt and then mix the wet and dry ingredients.

6Beat the egg whites until just stiff and fold them into the mixture.

7Preheat a griddle with melted butter and ladle servings of the batter onto it.

8Cook until lightly golden on each side.

9Serve warm with your favourite toppings or fillings.
